Delicata Squash with Azuki Beans

Delicata Squash rounds on baking sheet

Serves 2 – 4

Ingredients:
1 cup Azuki beans (soaked 6-8 hours)
1 inch piece kombu sea vegetable (optional)
1 small onion, finely chopped
4 tablespoons Azuki Miso
2 tablespoons Tamari
1 Delicata squash cut into rings (seeds removed)
1 tablespoon olive oil
Salt and pepper to taste

Directions:
On medium flame cook beans with kombu and 2 cups of water for 1-11/2 hours adding more water as needed. Coat squash with oil, salt and pepper and bake at 350ยฐ for 35 minutes. When beans are soft add miso and onion.
Continue cooking until any extra liquid is absorbed. Add tamari. Stuff squash with beans. Bake for 15-20 minutes and serve.
