Season’s Greetings from South River Miso

In this time of short days and long, dark nights, we bring as much light into our lives as we can in festive gatherings with friends and family. Itโ€™s also important to give ourselves deep rest and soul-nourishing foods to stay healthy and balanced during the busy holiday season.

South River Miso is an ancient, time-tested savory seasoning that offers many health promoting benefits like high quality vegetable protein, natural probiotics and enzymes, all vegetarian ingredients, and itโ€™s always organic and GMO free.

Make yourself a soothing bowl of miso soup to balance all of the tempting sweets and treats of the holidays. Or create a miso dressing to go over steamed leafy greens, or a tenderizing marinade for fish, chicken, tofu or tempeh. Get inspired by our many creative recipes.

Give yourself and your loved ones some of our 9 delectable varieties of miso for the holidays. We offer a gift pack of four selected varieties. All of our miso is currently available; including some specialty miso, such as Garlic Red Pepper and Dandelion Leek . We also offer USA-made Tohum Sesame Tahini and Blue Heron Farm Maple Syrup, which is made locally in western Massachusetts.

Onion Soup with Miso

Two jars of miso with onions and greens

Serves three or four

Ingredients:

4 large onions, thinly sliced
2 tbsp Sweet-Tasting Brown Rice Miso (or substitute any of our light miso varieties)
2 tbsp Garlic Red Pepper Miso (Using two varieties is optional. Use a total of 4 tbsp of miso.)
1 quart water
Olive oil
Pinch of sea salt
Pinch of dried thyme
Chopped parsley and scallion

Directions:

1. Heat olive oil in heavy soup pot and add onions with pinch of
sea salt and dried thyme.

2. Sautรฉ on high flame for 1-2 minutes, then reduce to low flame.

3. Add 2 cups of water, cover and simmer for 20 minutes, stirring occasionally

4. Add remaining water and bring to boil over high heat.

5. In a small bowl blend miso with ยฝ cup liquid from pot. Reduce flame and add diluted miso. Turn off heat.

6. Season to taste by adding more miso if desired. Serve garnished with fresh parsley and scallions.

This is a healthy, soothing soup. Add your favorite melting cheese to your soup bowl if you like and some croutons. Enjoy!
