Warm Holiday Wishes from South River Miso

How wonderful to brighten the short dark days of winter by gathering with friends and family and sharing good food. Enjoy South River Miso as part of your festive and healthy holiday recipes. It adds savory richness to soups, vegetable, grain or bean dishes; is a tenderizer in marinade for meats and fish and a flavorful ingredient in dips, salad dressings and sauces. Festive Chicken Over Greens

Serves three or four

Chicken Marinade Ingredients:
2 medium boneless, skinless chicken breasts (approximately 1 lb)
2 tbsp Sweet Tasting Brown Rice Miso or other one year variety of miso
1 tbsp olive oil
1 tsp salt
ยผ tsp fresh ground black pepper
1 tsp fresh rosemary or ยฝ tsp of dried rosemary
1 tsp fresh sage or ยฝ tsp of dried sage
2 cloves crushed or minced garlic

Directions:
1. Pound the chicken breasts with the bottom of a glass jar to insure an even thickness.

2. Mix marinade ingredients. Coat both sides of chicken. Let sit in bowl to marinate for 30 minutes or more.

3. Bring a large pan to medium-high heat. When hot, coat the pan with olive oil. Turn heat to medium. Add chicken breasts and cook on one side for about 1 minute.

4. Turn chicken breasts over, reduce heat to low and cover. Cook, covered with a tight-fitting lid for 10 minutes. Do not lift the lid.

5. Turn off and let sit covered for an additional 10 minutes.

Vegetable Dish Ingredients:
1 tbsp olive oil
2 cloves crushed or minced garlic
2 tsp Garlic Red Pepper Miso or other variety of miso
1 tsp lemon juice
ยฝ cup thinly sliced red pepper
ยผ cup of chopped tomato (cherry or other)
3 ยฝ cups finely chopped kale, Swiss chard or other greens

Directions:
1. While the chicken is cooking, bring a large pan to medium-high heat and coat with olive oil. Saute minced garlic and quickly add the peppers, tomatoes, and greens.

2. Reduce heat to medium and continue stirring for about 3-4 minutes until vegetables are lightly cooked. Turn off the heat and stir in the lemon juice and miso.

3. Cut chicken breasts into small cutlets and serve over the greens, garnishing with fresh rosemary or parsley. Enjoy!
