Azuki means โ€œsmall beanโ€. It is often spelled Adzuki or Aduki, but Azuki is the modern Japanese pronunciation and proper phonetic spelling. Azuki bean was first mentioned in Chinese literature in 300 BC.

The azuki bean, Vigna angularis, is one of the smallest beans common to Japanese and East Asian cultures and cuisines. Since ancient times, it has been a favorite in Japanese cuisine, where it is highly prized for its delicate flavor, nutritional properties, and healing benefits. Azuki beans are rich in antioxidants. In Oriental and macrobiotic nutritional therapies they are associated with healthy kidney function and support. Even before fermentation, when properly prepared, the azuki bean is one of the easiest beans to digest.

Azuki beans and rice are a traditional combination for many dishes in Japanese cuisine. In this miso they are happily married together as one whole seasoning. This is the most delicate of miso varieties.
